Choose the Right Cut

Great steak starts with great meat. 

Ribeye, striploin, sirloin and filet mignon all perform beautifully in cast iron because they respond well to high-heat cooking. Choosing steaks with good marbling allows the fat to render during cooking, creating exceptional flavor and tenderness. 

Before cooking, allow the steak to sit at room temperature for 20 to 30 minutes. This promotes more even cooking from edge to center. 

Heat the Pan First

One of the biggest mistakes home cooks make is adding the steak before the pan is fully heated. 

Cast iron should be thoroughly preheated before adding a small amount of high-smoke-point oil. Once the steak touches the pan, avoid moving it too frequently. Allowing it to remain undisturbed helps develop the rich brown crust created through the Maillard reaction. 

Near the end of cooking, many chefs add butter, garlic and fresh herbs such as thyme or rosemary, spooning the melted butter over the steak to enhance flavor. 

Rest Before Slicing

As tempting as it is to cut into a steak immediately, resting is one of the most important steps. 

Allowing the meat to rest for five to ten minutes gives the juices time to redistribute throughout the steak instead of running onto the cutting board. The result is a more tender, flavorful eating experience.
