2. Working in batches, transfer apple mixture to a food mill or a food processor fitted with a metal blade and pur\u00e9e just until a\u00a0uniform texture is achieved. Do not liquefy.<\/p>\n
3. In a clean large stainless steel saucepan, combine apple pur\u00e9e, sugar, cinnamon and nutmeg. Bring to a boil over medium-high heat. Boil, stirring frequently, until mixture thickens and holds its shape on a spoon (see Testing Fruit Butters for Doneness, page 52).<\/p>\n
4. Meanwhile, prepare canner, jars and lids. (For more information, see page\u00a0417.)<\/p>\n
5. Ladle hot butter into hot jars, leaving 1\u20444 inch (0.5 cm) headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot butter. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.<\/p>\n
6. Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process for 10\u00a0minutes. Remove canner lid. Wait 5\u00a0minutes, then remove jars, cool and store. (For more information, see pages\u00a0418\u2013419.)<\/p>\n

When measuring wet ingredients, use a liquid measuring\u00a0cup (with a handle and spout and graduated markings for measures).
